Macaroni & cheese is every child’s favorite go-to comfort meal. In my house especially on the weekdays, I’m always looking for quick, simple, and healthy meals for my son. Although I do love mac & cheese, I want to make sure that my son is getting all of his daily nutrients, especially from vegetables. Plain mac & cheese just doesn’t cut it, I feel like he would be missing out on all the goodness that comes out of vegetables.
Mac & cheese is as comforting as it gets. This recipe is made with just a few simple ingredients that you probably have in your fridge and pantry already. The best part about it is it can be customized in any way. You can add whatever vegetables you like whether its broccoli, kale, spinach, or frozen vegetables, the possibilities are endless!
This is a perfect meal for picky toddlers who aren’t too fond of vegetables. Once it’s hidden in that ooey-gooey mac and cheese, they’ll be sure to eat every bite.
Cooking tips to making veggie-loaded mac & cheese
- Cheese: Use your child favorite! You can add as many different cheeses as you’d like. I just stick to shredded nacho mix cheese, because that is usually what we have in our fridge. I do want to start experimenting with stronger flavored cheeses next.
- Freezing: This recipe makes 4 servings. You can always freeze the sauce by putting it in an airtight Tupperware and defrosting it when you’re ready to serve it again.
- Herbs and Spices: Add herbs and spices to enhance the flavor! I’m slowly incorporating different herbs and spices in my son’s food. I’ve added garlic powder to this recipe. You can add herbs and spices such as dried oregano, dried basil, dried parsley, onion powder, etc…
- Recipe for adults: You can make this recipe for older kids and adults as well. The only thing I would change would be to add more rich flavored cheeses. My favourite for mac and cheese is Gruyere.
