Veggie egg muffins are the perfect quick and easy breakfast, especially when you’re on the go. What I love about these are that they’re perfect for the entire family. You can also customize them by adding ingredients of your choice, whatever suits your family’s taste buds.
I love making veggie egg muffins for my son, so he gets a good amount of nutrients through his vegetables in the morning. I also like to add whatever leftover vegetables we have in the fridge, so that they don’t go to waste.
I try making a big batch of the veggie egg muffins, so I can heat them up for a quick style breakfast during the week. It really saves time for me especially if we have busy mornings, or in some cases, I’m too tired to whip up something fancy for breakfast.
I do always make sure that my son is eating at least one fruit and one vegetable in the morning. I’m lucky he loves his veggies, but I also try to come up with recipes where you can hide the taste of the veggies, so I can share it with all you mamas who have picky eaters.
There are many different varieties you can try. The veggie egg muffins that I make for my son will be included in the full recipe. Here are some ideas below that you can choose from when making your egg muffins
Picky Eaters: add spinach and cheese. Spinach doesn’t have any taste to it and it’s the perfect way to hide veggies in your child’s food. Add cheese and don’t be shy, kids love cheese and it’s a great way to add calcium to their diet as well.
The Carnivore: add chopped bacon and/or sausage for the meat lovers. You can also add in some chopped red peppers, and of course, cheese!
The Greek Lover: This is one of my favorites. Add in red pepper, green pepper, feta, and spinach. This gives more of a rich flavor because of the feta. If your child doesn’t mind the taste of feta, I would definitely make this one!
These are just my suggestions as to what type of egg muffins are probably the most kid-friendly. Like I said earlier in my post, you can add in whatever you like (even anchovies, if that’s your thing).
