This kid-friendly salmon fritter is soft on the inside and crunchy on the outside. It gives a twist on the original fritter as it is baked and not fried. Serve it with a yoghurt and herb dip for a hearty and healthy meal for your toddler.
Finger foods are perfect for toddlers and help with their eye-hand coordination. They’re easy to eat and are the best type of food when your toddler is learning to eat on their own.
These salmon fritters are both tasty and healthy. It gives a spin on the original fritter which is usually deep-fried. I don’t deep fry anything for my son & I am always looking for ways to make his meals as healthy as possible.
I serve these fritters with a lemon & herb yoghurt dip, which pairs really nicely with the salmon.
Tips to Making Salmon Fritters
- You can use fresh salmon or canned salmon. I use canned salmon because it’s quicker and easier. Make sure if you are using canned salmon you find one that has low sodium.
- You can bake or fry them. I choose to bake because it’s healthier but feel free to fry them if that’s what you and your little one prefer.
- You don’t have to use salmon for this recipe. You can customize it and add in tuna or chicken if you like!
- Before you bread the fritters, chill the mixture in the fridge for a half-hour. This allows the mixture to become more firm which allows for easier breading.
- I like to prebake my breadcrumbs to get a nice golden colour and texture. You can skip this step if you want.
What to Serve Salmon Fritters With:
- steamed vegetables (zucchini, broccoli, carrots)
- brown rice
- quinoa
Freezing Salmon Fritters
If you’ve made too many, you can always freeze them. Place the uncooked fritters on a baking tray and freeze them for an hour. Once frozen put them in an airtight container. I would recommend wrapping each fritter in plastic wrap so they don’t stick to each other once they’re placed in the freezer.
Defrost them overnight and bake.
