I love making healthy and flavorful meals for Milan. These Cheesy Broccoli Quinoa Nuggets are packed with flavour and super healthy.
Kids love anything with the word nugget, am I right?
Quinoa is packed with so much protein so it’s great to give to growing toddlers and kids. Quinoa is also rich in iron, fibre, and magnesium and in my opinion, I think it is a better option to serve than rice. I personally love quinoa and usually eat that in place of rice. These Cheesy Broccoli Quinoa Nuggets are the perfect food for flavour and fun.
I’m always making sure Milan is eating his greens. It’s important to me to make sure that Milan is eating his greens, and broccoli is one of his favourite vegetables. There are so many things you can do with broccoli and it has also been my favourite vegetable since I was a kid. Broccoli is also a good source of fibre and protein and also aids in blood sugar control.
These Cheesy Broccoli Quinoa nuggets are a great source of fibre and protein and is packed with so much flavour. They’re also great for baby-led weaning if you choose to go that route with your babe.
I make these with mini muffin tins as opposed to the bigger muffin tins, so that the cheesy broccoli quinoa nuggets are easier for him to eat. But if you want to make these for adults, then feel free to use the bigger muffin tins.
STEP ONE
Preheat the oven to 350 degrees.
STEP TWO
Add all of the ingredients to a large mixing bowl, and mix until well combined. I always use my Kitchen Aid mixer, because it gets the job done faster.
STEP THREE
Once the mixture is well combined, spray a mini muffin tin with non-stick spray. Place the mixture in each muffin tin, and be sure to press down so that it sticks together.
STEP FOUR
Place the cheesy broccoli quinoa nuggets in the oven for 20 minutes or until golden.
STEP FIVE
Let the nuggets sit for 10 minutes before serving. You can serve them with your child’s favourite dipping sauce.
